The Protivin brewery in the Czech Republic is using crayfish to monitor water quality. But don't worry: they don't end up in the final product.
The crustaceans are fitted with infrared sensors and placed in tanks containing the brewing water. The brewers are alerted to whether there's a change in water purity based on any difference in cardiac activity of the crayfish. Scientists also use them to study water pollution, because crayfish react very quickly to any change in water quality.
Cheers to our new crustacean drinking buddies!
