00:00Commonly referred to as rooster sauce, sriracha first came on the scene in the 80s.
00:05These days, we put it on everything.

00:13The first batches of sriracha were made in baby food jars by founder and CEO of Hoifong Foods, Mr. David
00:21Tran.
00:21Over 30 years later, his famous sauce is made here at his 650,000 square foot factory in Irwindale, California.
00:32The red jalapeno hybrid is the only chili pepper worthy of the rooster.
00:37And they're only in season four months out of the year.
00:4021 tons of these peppers are delivered daily.
00:44That's 100 million pounds a year.
00:48Inside, the peppers are inspected and washed before heading up and into the grinder.
00:56Unlike other condiments, sriracha is never cooked.
01:01Instead, the fresh chilies are ground into a mash that's piped directly into industrial mixers
01:06where it's combined with vinegar, salt and preservatives forming a base for the sauce.
01:12After it's mixed, the base travels to the filling station
01:15where it's pumped into 55-gallon storage barrels.
01:22The barrels are stored in the warehouse to be used throughout the year.
01:30When it's time to make the sauce, the filling station works in reverse.
01:35The chili base is extracted and pumped into the second mixing room.
01:39While we can't tell you the exact recipe for sriracha,
01:42the chili base is combined with garlic and sugar to make the final sauce.
01:47The iconic bottles are made in the same factory, starting off as small plastic preforms.
01:55A blow mold machine heats and expands the plastic into fully formed bottles,
02:00which are labeled with a silk screen and finally filled with sriracha goodness.
02:07This assembly line turns out 3,000 bottles an hour.
