RAGI SET DOSA AND TOMATO CHUTNEY

Check out my latest recipe video featuring Set Dosa made with nutritious Ragi flour and served with tangy Tomato Chutney! 😋 Ragi, also known as finger millet, is a superfood packed with health benefits like high fiber, calcium, and antioxidants. It’s a great addition to your regular diet for a nutritional boost.

Ingredients:
1 cup Finger Millet Flour (Ragi Atta)
1/2 cup Semolina (Suji)
1/2 cup Yogurt (Dahi)
Approx 1/4 cup Water
Salt to taste
Finely chopped Cilantro
Fruit Salt (alternatively, 1/2 tsp yeast or a pinch of baking soda can be used)
Oil (as needed)
1/2 tsp Cumin Seeds (Jeera)
1 tbsp Bengal Gram Split (Chana Dal)
1 tbsp Split and Skinless Black Lentils (Urad Dal)
Tamarind (Imli)
1 Dried Red Chili
4 medium Tomatoes, finely chopped
1 Onion, finely chopped
Mustard Seeds (Rai)
A few Curry Leaves

Method:
In a mixing bowl, add 1 cup Ragi Atta
Add 1/2 cup Suji
Add 1/2 cup Dahi
Add approx 1/4 cup water and mix
Let the batter rest for 10 minutes
Add water as needed (to bring the batter to dosa consistency)
Add salt to taste
Add finely chopped cilantro
Add fruit salt, mix the batter, and start making dosas
(You can keep the batter overnight for natural fermentation)
Heat a pan, pour a ladleful of batter, and spread to make a thick dosa
Cook on medium heat until bubbles start to appear
Drizzle a little oil on the dosa
Cook until it’s dry on top
(You can flip and cook the other side too)
To make Tomato Chutney:
Heat oil in a pan
Add 1/2 tsp jeera and let it crackle
Add 1 tbsp chana dal
Add 1 tbsp urad dal
Add some tamarind
Add 1 dried red chili
Fry until golden brown
Add 4 finely chopped medium tomatoes
Add 1 finely chopped onion
Add salt to taste
Turn off the heat when tomatoes turn mushy
Let the mixture cool
Blend in a mixer once coo
