00:00you want to know how to level up your fajitas let me show you how to make them on the
00:03smoker
00:03let's go first thing we're going to do is make our marinade we're going to drop two whole cloves
00:08of garlic down into our marinade bag got this piece of flank steak here and the flank steak is
00:13now going to go into the bag and you want to put enough orange juice in the bag to completely
00:18cover
00:18your meat don't be a pervert just cover the meat no perverted meat nude meat jokes here all right
00:25guys then from here we're going to dump about a quarter of a cup of worcestershire sauce in on top
00:30of it that's all our marinade is going to be now you just again make sure that your meat is
00:37fully
00:37submerged and go ahead and push all the air out and we're going to put this in the refrigerator and
00:42let
00:43it marinate for about four hours now our meat is almost done so we're going to go ahead and start
00:48chopping our vegetables we're going to start with one sweet onion
00:57now we're going to cut up our bell peppers and we're basically going to follow the same process
01:01for all three we're going to do a green red and an orange i like to use those peppers because
01:06they're
01:06sweet so they add a nice flavor they contrast well with the meat you'll see these in most fajita dishes
01:16next we're going to season our meat and i have a feeling this is going to be a hot button
01:20issue for
01:20some of you guys but you're going to have to trust me on this all right i'm going to season
01:24my meat
01:26with skull and mortars og barbecue rub now you can use any barbecue rub you can use a salt and
01:32pepper
01:32rub it doesn't really matter like do it to your flavors like do it to your liking but uh trust
01:38me
01:38on this live a little bit it adds a nice little sweetness to the meat which is good with the
01:43vegetables
01:43and the marinade but it also adds a lot of really nice peppery notes so consider stepping outside the box
01:49a
01:50little bit here and the same thing is going to go for our vegetables we're going to hit it with
01:54some
01:54evoo for those of you who aren't in the rachel ray uh fan club that's the extra virgin olive oil
02:02and then we're going to hit it again with a little bit of that skull and mortar og barbecue rub
02:06again i
02:06like the peppery notes you can certainly go with uh any sort of fajita or taco seasoning something you
02:13know that adds a little more traditional mexican flavor if you like
02:17so we're going to start uh directly with our meat on the rack now i'm going to use my smoke
02:21box over
02:22here to kind of help get started on the heat with the pan if you are not using the auto
02:26ignite just
02:27set it straight on the rack mine is going to end up there anyway so i like to flip my
02:31meat uh every
02:32couple of minutes so that way since the meat is thin it kind of makes me feel like i'm not
02:37burning it
02:38but there's no right or wrong answer flip it as much as you like despite what my uncle steve says
02:43with
02:43those burnt ass burgers that taste like cardboard and charcoal so i'm happy with how my meat looks
02:48now so i'm going to again call on that firebox and use it as a griddle to give my meat
02:52a nice sear
02:53so this is a dope feature that the auto igniter for master build has but again it's purely optional
02:58now a lot of time i see these flank steaks cut with the grain and i'm not sure why people
03:03do that
03:03but i definitely would recommend cutting against the grain it's going to just make this meat so easy
03:10to bite through i like my chunks of steak a little thicker you can cut them thinner if you like
03:15but yeah we're just going to chop that meat up at this point now let's get these fajitas put
03:20together we got some toasted tortilla shells here and of course we're going to give it these vegetables
03:25and these vegetables are perfect because they have a little bit of snap to them so they're not mushy
03:30you know what i mean that's how you get the best flavor out of them don't overcook your vegetables
03:34here and again put as much vegetable and meat as you like in yours guys the only thing left to
03:41do now
03:41is to try these fajitas go ahead and grab one friend
03:52oh yeah
03:55what do you think about those
04:02dang
04:08look at the perfect amount of juice in them
04:12the vegetables are cooked perfectly they're tender they're but they're not overcooked there's a nice
04:17sweetness to it there's all kinds of peppery notes of course that beefy flavor
04:22you guys making fajitas on your grill adds just that extra little that little chef's kiss
