10:01I'm making duck with carapé ribs and sour cherry gastrique.
10:05This dish marks my first gold medal in a competition when I went to culinary school.
10:10The competition required you to do a poultry, and my chef at the time was like, George,
10:14you got to go chicken, and I said, hell no.
10:16Chicken is for the, you know, for the weak people.

10:20One of your teammates is making duck as well.

10:24It's a hard protein to cook, so yeah, there you go.
10:27Growing up as a Chinese American, we would go to the pecking duck house all the time,
10:31and it was just one of my favorite things, and it reminds me of my family and my childhood.
