00:00Okay, let's see it's bubbling away there. So I think we're ready. Okay, let's go eat.
00:07Okay. Wow, there we are. That smells and looks so wonderful. So we're going to have with our
00:17sides some couscous. Yeah, the pearl couscous. Yeah, so let me give you a couple pieces there,
00:23but also we have this lovely broth, so we want to make sure that we get that.
00:29One of our sauces is a green sauce that has an herby flavor, if you will, and some olive oil
00:37and a little bit of heat from a pepper. And then we made our yogurt sauce, and that is creamy
00:45and
00:45thick and nutty and has a little bit of herb. Now, this is my son-in-law's favorite sauce,
00:51but this is called the Sultana sauce, and it has golden raisins, lime, and butter. So you get this
00:59sweet punch, and then you get the zing of the lime. So we love this. And the trick is that
01:05you take a
01:06little piece of chicken, and then a tiny bit of one of the three sauces, and then the next bite
01:12you
01:12have, you take another one. Oh, I love this. All right, on to yogurt. And let's do the yogurt.
01:22You get the creaminess, but you got a little bit of that herb cilantro. This is fun. No Moroccan meal
01:29would be complete without mint tea. The way we make it in Morocco is with actual mint leaves. We steep
01:34the
01:34tea in warm water over the fire as the embers are dying at night. And Moroccan tea, there's usually a
01:41lot of sugar. Okay. All right. Well, a toast to you, Katherine Kelly, for coming on my show and
01:46showing me what it's like to be in Morocco, the most magical place on the earth. I can sell it.
