01:46So when I opened, you know, I knew that I needed to have sort of bacon in everything, you know,
01:51which made sense for food, but when I'm looking at my bar, I guess we're called Bar Bacon,
01:55and I said, you know, we really need to have bacon represented in the bar.

02:01Alcohol's got this great quality where it sort of pulls flavor from fat better than anything,
02:05so we started infusing our vacas and bourbons and a couple rums.
