00:22all right so what we have here
00:26is on this side we have a convex edge
00:30and on this side i've done a v bevel the reason is because this
00:40edge this factory convex was absolutely horrendous
00:45i put it on my whetstone grinder and that edge was all over the place obviously someone's been
00:51sharpening it on a belt or whatever and just didn't do a very good even job
00:58so yeah a very mickey mouse convex edge that was on it
01:09uh 300 slices and the edge wore away that's after i resharpened it on a belt
01:21so i resharpened the knife on this little belt grinder here that's what i used to do convex with
01:33it's just there for sharpening it's not really there for reprofiling a uh an edge
01:41but i did reprofile this side a little bit by putting it on the whetstone grinder and just
01:48grinding away different levels just to try and stop it from rolling over at the top too much
01:56and making the convex too blunt so i did that on one side which is the bad side i left
02:05it convex because
02:06it wouldn't just would have needed so much work
02:11uh i did a v edge on this side because this side was much nicer so i think what it
02:17is it's this edge
02:19it's a little bit too far this way because this side isn't too bad while this side is more curved
02:25i
02:26can run feel it running my finger over here like this this is very curved on that side and not
02:31as
02:32curved on this side which makes me think that it's the center of the blade is too far this way
02:38or that
02:39apex is too far over here and to correct that would be horrendous amount of work absolutely horrendous i
02:48would need a industrial sized belt grinder for that and i don't have one so this is a bit of
02:59a bitzer edge
03:02so it's a bit of convex on one side and a bit of the edge on the other side so
03:10let's see what happens
03:11see how bad can it be
03:20so
03:21i
03:21i
03:21Yeah, look, look, look.
03:24That's right.
04:02That's right.
04:30That's right.
04:31That's right.
04:33That's right.
04:49That's right.
05:00That's right.
05:14That's right.
05:25That's right.
05:30That's right.
05:37That's right.
05:38That's right.
05:39That's right.
05:49That's right.
05:50That's right.
05:50That's right.
06:02That's right.
06:31That's right.
06:41That's right.
06:43That's right.
06:54That's right.
06:55That's right.
07:22That's right.
07:32That's right.
07:34That's right.
07:35That's right.
07:38That's right.
07:57That's right.
08:03So as long as you're not taking a big enough slice of the paper, it's slicing.
08:09But as soon as you start going for a thinner slice, then it doesn't do it.
08:14So I think we might be on 600 slices or something.
08:20My hand is aching like something horrible.
08:23So I'm going to stop there.
08:26I'm going to stop at 600 and we're going to call it there, but I think with a much, much
08:37better edge, if this knife had been hollow ground or Scandi or something, it might have been like truly awesome.
08:46Really fantastic, but just unfortunate.
08:50It was just the convex.
