The “eye” refers to the central core of a major muscle, located in the rib section between ribs 6 and 12.
It’s one of the muscles that works the least, which is why the meat is incredibly tender and full of flavor.
For a piece this size, I would have gone for a lower doneness… but as I always say: everyone has their preferred doneness. 🔥
