Crispy barbecue chicken wings on the grill start with a simple prep that makes all the difference: a light spray of oil, a salt-and-pepper style brisket rub, and a heavier coat of barbecue rub for color and flavor. The wings go straight onto the smoker or grill at 300 degrees, placed away from the firebox so they cook evenly while the fat renders and the skin turns crisp instead of rubbery.

After about two hours, the temperature is raised to 350 degrees for the final stretch, helping the wings finish with that perfect grilled texture. Once they’re done, they’re tossed in barbecue sauce right off the smoker so the sauce can caramelize on the hot wings and lock in that sticky, smoky finish.

This is an easy smoked chicken wings tutorial for backyard BBQ, game day food, and anyone looking for a reliable grill method for crispy skin and big barbecue flavor. It’s a straightforward wing recipe that works on a smoker, pellet grill, or any grill with heat control.

00:00I'm John Barker, a.k.a. your grandma's favorite pitmaster, a.k.a. the Million Dollar Barbecue
00:05Man, and today we're going to make the best chicken wings that you've ever had.
00:19Guys, getting super crispy chicken wings on your smoker is easy, and you need very little
00:23for it.
00:23We're going to use some OG Barbecue Rub from Skull and Mortar.
00:27You can get that at SkullandMortar.com.
00:29We're going to use a little bit of Smokin' Simmons brisket rub.
00:32You can use any AP rub that you have on hand, some cooking spray, and some of that Skull
00:37and Mortar OG Barbecue sauce.
00:39Let me show you how easy this is, guys.
00:41First off, you take your spray can and put a little fat on those wings.
00:45That's going to help your rub adhere.
00:48Okay, we're going to go over it with some of that brisket rub.
00:52We want a light coating here.
00:54Don't get too out of control.
00:56Something light just like that.
00:58Then we're going to go back over it with the Skull and Mortar Barbecue Rub.
01:02Now, this is going to help with the color.
01:04This is going to help with all those peppery notes, that richness of flavor, and this is
01:07where you want to get it a little bit heavier.
01:11Now, these flavors together are really going to work out.
01:14They're going to be perfect.
01:16They're going to hit every flavor profile, really.
01:23Toss your wings over to the other side.
01:27Guys, then we literally are just doing the same thing to the other side.
01:31Spray.
01:32The spray is going to help with the crispiness.
01:34It's going to help with that rub adhering.
01:38Boom.
01:39Good little dusting of that.
01:41Make sure you get it all over your table.
01:43It would not be a Skull and Mortar tutorial if we were not getting rub every damn wire and
01:49then having to spend six hours cleaning it up afterwards.
01:53Guys, that's it, man.
01:55That's all the pre-prep this takes.
01:56We're going to take these directly to our auto-ignite and throw them on.
02:00You can do this on any grill or smoker.
02:02We're using the master built auto-ignite.
02:06All right, we've got our auto-ignite set to 300 degrees.
02:09As you can tell, we've been cooking a lot on this bad boy.
02:12Love this grill.
02:18We're going to start stacking these away from the firebox.
02:22That's going to make it a little bit cooler.
02:24The closer we get to the firebox, the hotter it's going to get.
02:28Again, we want to keep our grill and our meat at about 300 degrees.
02:32We're cooking on that high temperature because it's going to help render that fat.
02:35It's going to help get the outside crispy.
02:37If you cook it any lower than 300, you're going to run into that soggy skin.
02:42And that's the one thing we do not want.
02:44All right, guys, that's it.
02:45We're going to throw it on here.
02:46We're going to check it every hour or so until we reach our internal temperature.
02:50And that's it, man.
03:06Guys, our wings are done.
03:07Our skin is exactly how we want them.
03:09They are hot.
03:10We're going to take some of that OG barbecue sauce from Skull and Mortar and we're just
03:14going to drop that right there in the bowl on top of our wings.
03:19And then we're just going to toss the wings around.
03:25Add a little bit more sauce here.
03:29See that steam coming off of them?
03:31These bad boys are fresh off the smoker.
03:33I like to get the sauce on them directly when they come out of the smoker because I feel
03:37like the sauce kind of caramelizes on there.
03:40Look at that.
03:43Look at that falling apart.
03:46Let's try that guy right there.
03:47That looks delicious.
03:49Let's have a bite.
03:52Right off the bone.
03:54Mmm.
03:55It's juicy.
03:56It's moist.
03:56It's sweet.
03:57It's spicy.
03:58It's literally, it's perfect.
04:01Guys, it's literally that easy to make a delicious crispy smoked chicken wing on any smoker.
04:07We use the auto ignite for master built.
04:09We ran our chicken wings at 300 degrees for two hours, bumped it up to 350 and let it run
04:14another 30 minutes.
04:16It literally was that simple.
04:17We used a salt and pepper rub.
04:19We used a barbecue rub.
04:20We use some spray oil.
04:21We tossed it all on.
04:23And then finally at the end, when we were all done, we tossed in some barbecue sauce and
04:26we got perfect barbecue wings.
04:28I'm going to go ahead and have another.
04:29I'll see you guys soon with a brand new video, skullandmortar.com, for all your culinary
04:34needs.
04:37I don't think it's good, it's real good.
04:43I'd kiss myself on the lips if I could, that's how good it is.
04:59We'll see you then.
04:59And then we're, I love you again.
05:00I'm going to go.
