00:11all again and i hope that i find you all very well and thanks for coming over for this week's
00:16archive recipe and this one is from june 2021 so about five years ago and it's lovely and see if
00:23you like a slow cooker recipe and if you do like lamb although you can use a different meat if
00:28you
00:28prefer you're going to love this so let me pass you over to me from about five years ago and
00:33i'll
00:33catch up with you just at the end not everybody likes to use lamb so if you don't like using
00:39lamb
00:39you know you can use beef or something like that i wouldn't recommend chicken but certainly beef
00:44could be used instead of the lamb very very simple ingredients and a very easy recipe so i'm going to
00:51quickly show you how i put this together so go over to your cooker use whatever oil you like i'm
00:56just
00:56using some olive oil and in a bowl i've just got a wee bit of plain flour and some salt
01:02and pepper
01:02just combine them roughly and you want to pop your meat into this and just give it a good coating
01:08this
01:09is going to protect your meat you know as it cooks and it will also thicken your gravy it'll give
01:14you a
01:14bit of a thicker gravy as well so you just want to sear this off just make sure it's nice
01:19and brown
01:20on all sides it won't take you long at all but you might have to do it in a couple
01:25of different
01:26batches because you don't want it to stew you do actually want it to fry so i've done mine in
01:31two
01:31different batches and then once you're happy you can just set this to the side now with a wee drop
01:37of
01:37your stock pop some into your pan you just want to get those beautiful flavors off of the bottom of
01:42the pan and i'm going to add in a teaspoon of rosemary as well just let this bubble away for
01:48a
01:48couple of minutes then go over to your slow cooker i'm using a three and a half liter crock pot
01:54now you
01:54can layer these ingredients any way you want but i'm just showing you how i do i like to put
01:59the things
02:00that take longer longer to cook in the bottom so i'm with the carrots the onions i'm using some green
02:05beans
02:06and then a layer of those potatoes now you don't want to cut these too thick because your slow cooker
02:11is going to be jam packed you know everything's going to be quite compact so make them quite thin
02:17so that they do cook all the way through so a layer of your potatoes and then i'm going to
02:22pop in
02:23some salt and pepper between the layers and half of my meat like i said i'm using lamb but use
02:29beef if
02:30you prefer and i've just layered up exactly the same way as the first layer with another layer of
02:36potatoes in the middle some more salt and pepper
02:42and then the rest of your meat on with your onions another layer of your tatties and on top you
02:52just
02:52want to put the rest of your stock along with the contents of your pan and then some melted butter
02:57just
02:58over the top of the potatoes give this seven hours on high or you can cook it on low between
03:04eight and
03:04nine hours but this one had seven and this was my end result and as you can see it's going
03:10lovely
03:10and golden now if you prefer a crisp top you can pop your crock pot liner into the oven for
03:1715 to 20
03:18minutes just to go crispy on the top but we love it just the way it is i don't think
03:23it's necessary at
03:24all and look oh it just even looks delicious you can see the flavors there or i think you can
03:31see the
03:31flavors now you really don't need much with this you know it's quite rich and fatty and very very
03:38filling so i simply served this with some crusty bread and butter on the side but to be honest you
03:44don't even need that this is so filling and from the ingredients i've shown you using my three and a
03:50half
03:50liter crock pot you will get between four and five really good servings of this side of the size sorry
03:59i'm looking at the bread on the side there and i just put some parsley on the top as well
04:06and this
04:06meat was a fall apart tender oh just amazing certainly one i will be doing again in the near
04:13future it's the perfect spring stew in my opinion oh my goodness i can almost smell that through the
04:21screen that is so delicious highly recommended like i said if you do like a slow cooker recipe
