00:05well hello there folks and a very warm welcome back to what's for tea and it's lovely to see
00:11you again and i hope that i find you very well so this was a recipe request by one of
00:16you
00:16it's cajun sausage and potatoes but specifically made in the crock pot i tried my best to keep to
00:23the original ingredients but i couldn't find the actual sausage that would typically be used and
00:29that's andouille sausage but after a quick google search i found that a better you know a really
00:34good alternative is kielbasa which is what i ended up using or failing that if you're in the uk
00:41mattison's smoked pork sausage which comes in quite a few different varieties i would go for the garlic
00:47or the chili one just to give you the same kind of you know flavor profile and that's them they
00:53are
00:53just on the screen i am using baby charlotte potatoes just because they hold their shape
00:59really well in the slow cooker and they're not going to go all mushy i'm going to keep the skins
01:04on as well again just to make sure they don't fall apart and also a can of campbell's condensed
01:11mushroom soup for that lovely creamy rich sauce and this is the seasoning that i'm using here
01:18you can use creole or cajun seasoning and it's got a lovely warm spicy flavor and also i'm going to
01:26add
01:26a teaspoon of smoked paprika and for a wee bit of extra liquid you'll need some milk or some water
01:32i'm
01:32just going to use milk because it made the sauce beautifully creamy so the first thing i'm going to
01:38do is make up the sauce so just grab your liquid whether you're using milk or water pop your seasonings
01:44in so i've got my cajun seasoning and my smoked paprika and then to this we're going to add the
01:50mushroom soup so this is campbell's condensed mushroom soup and it's going to be beautiful
01:55and rich and creamy by the end and you just want to give this a good mix together until all
02:01looks
02:01you know kind of relatively lump free and smooth just like this and it'll take you a minute or so
02:08it
02:08doesn't take long at all and then you can prepare your sausage like i said i am using kielbasa
02:13and you want to slice or chop this into one inch pieces and i'm then going to cut the sausage
02:19again
02:20just through the middle just because these slices are quite large so through the middle again i'm just
02:25going to push these to the side and then start on the potatoes but like i said if you can't
02:30find this
02:30sausage mattison's sausage will be absolutely fine it's actually very similar so wash your potatoes well
02:37and i'm just going to slice these down the middle because i wanted nice big chunky potatoes
02:42just like the sausage so i'm just going to slice mine through the middle but you can
02:46you know chop these smaller and chop the sausage smaller if you like but apparently this is meant
02:51to be quite a chunky casserole so i try to keep everything quite chunky this is my slow cooker here
02:57it's a two and a half litre crock pot so i'm going to put my potatoes in the bottom because
03:02they are
03:02closest to the heating element and they're going to cook that wee bit quicker i tend to do that with
03:08things the things that take longer i will put in the bottom i'm going to put the sausages on the
03:13top
03:13and as they cook all the juices will come out and penetrate into those potatoes and then i'm going to
03:19just put the soup and the seasonings all over the top and leave it there without stirring you can
03:25stir this but it was recommended to me don't stir it just pour it over the top and leave it
03:30alone
03:30so i'm going to pop the lid on and leave this on low for six and a half hours but
03:36you'll want to
03:36come back halfway just to give it a good stir but this is looking amazing already and the smell off
03:43of
03:43this was incredible and let me tell you see the flavor of this at the end and i think it's
03:48all due
03:49to that sausage it was just amazing so spicy and peppery and quite hot as well and the you know
03:56the
03:56potatoes were perfectly soft and the sausage was lovely and bouncy all just worked really well
04:02together for what is quite a simple recipe it was full of flavor so back on your lid and give
04:09it the
04:09rest of the cooking time and this was mine like i said it had about six and a half hours
04:14all together
04:15and this was ideal just make sure your potatoes are fully cooked all the way through these were
04:21beautiful and fork tender and let me tell you this gravy or this sauce was lovely this would have
04:28been lovely with chicken as well you know poured over some chicken but there were none left at the
04:33end so i didn't have any to keep but it was wonderful and we had some crusty bread on the
04:39table as well and
04:40all i done to this was put a wee bit of parsley on the top just for some added greenery
04:45just to you know
04:46make it look a wee bit more vibrant for the youtube thumbnail picture but this was unbelievably tasty
04:53i've never had anything like this before cajun recipes don't tend to be a thing here although i do
04:59love the flavors involved in this recipe so highly recommended you give this a go and like i said if
05:06you're in the uk don't stress too much about the sausage because like i said mattison's smoked sausage i
05:13reckon you're they're very very similar so i would just grab one of those if i was planning on doing
