00:00Ever had Pennsylvania Dutch chicken soup?
00:02Me either, but today's the day.
00:03Start by melting some butter in your pot
00:05and then go in with some onion and celery.
00:06Cook that down until it's softened.
00:08Season it up with a little poultry seasoning,
00:10salt and pepper.
00:10Next goes in the first star of the show, corn.
00:13Fresh corn is best, but you can use frozen if you want.
00:15As a matter of fact, I'm using a combination of both.
00:17Then go in with some chicken stock and bring it to a simmer.
00:19After it starts simmering, then I'm going in
00:20with three cups of cooked chicken, rotisserie chicken,
00:22because we're keeping it easy.
00:23The other star of the show up here are the rivels.
00:26These are little dumplings.
00:26To make the rivels, it's just simply eggs and flour
00:29with a little salt.
00:31You're just going to mix that until a dough forms.
00:32If you need a little more moisture,
00:33you can go with a little milk or more broth.
00:35And then you're just going to drop the little balls of dough
00:37into the soup, and you don't want them to be perfect.
00:40Let those rivels cook until they're puffed and tender.
00:43For the finishing touch, don't be scared, hard boiled egg.
00:46I said don't be scared.
00:47My mother-in-law used to put hard boiled eggs
00:49in our chicken and dumplings, and it was perfect.
00:51Add a little fresh parsley, check your seasonings,
00:53and serve it up.
00:54A pot of comfort and a couple surprise ingredients.

01:04I think the biggest distinction is that the soup
01:06has a little bit of sweetness from that corn,
01:08and you get little juicy, crunchy bites of that
01:11that you don't get in your normal chicken soup.
01:12The little rivels are like a dumpling meets a piece of pasta.
01:16It's a little more dense than a dumpling.
01:18And the egg, you don't even notice it's there,
01:19but you've got that extra protein.
01:20It's a winner-winner chicken soup dinner.
