In this video, Chefs Quynh Nguyen and Carlo Reinardy, who were named Food and Wine’s Best New Chefs in 2026, show you how to make Canh Cà Bung, otherwise known as Vietnamese Eggplant and Tofu Soup. Pair this satisfying soup with grilled pork and pickled veggies for a complete meal.

00:00Today we are making a canh cà bung.
00:02Canh cà bung in Vietnam,
00:03we usually cook a lot of dishes every day,
00:09like my mother always cook.
00:11Or I really remember that when I have time,
00:13I can cook a canh cà bung.
00:15You start off with basically like sautéing the pork belly,
00:18try and get some browning on it at the bottom.
00:19And then we start slowly adding in ingredients
00:21at the time that they cook.
00:22These are Japanese eggplants here.
00:24You can use, you know, western eggplants.
00:26It's not going to be as good.
00:27I would definitely try to source Japanese eggplants.
00:29It's also a great dish to have
00:30as part of like a fuller meal too.
00:32Usually in Vietnam you'll have a salty dish,
00:34a vegetable dish, and then like a soup dish.
00:36So this would be the soup component in that.
00:38Have a little grilled pork on the side,
00:40maybe a little pickled vegetable,
00:41and then this, and that's a pretty decent meal there.
