The Paper Bridge in Portland, Oregon is one of the few U.S. restaurants that makes fresh rice noodles every day. In this video, Chefs Quynh Nguyen and Carlo Reinardy, who were named Food and Wine’s Best New Chefs in 2026, walk you through their process of making fresh rice noodles from scratch. These steamed noodles can take hours to make and can even be affected by the weather.

00:00we're here at the paper bridge and we're making rice noodles today so this is our fun noodle
00:03machine makes the flat noodles as opposed to our boon noodles which are round this noodle is steamed
00:08whereas the other one is extruded and oiled it requires a very long machine because it requires
00:12time the first steam and then cool down it has to be this long or it's just not gonna work

00:18takes around about two hours to finish all the food noodle for a day so we have to make it
00:24daily
00:24and sometimes it depends on the weather sometimes you have to like mix the batter with a cold water
00:30or hot water it's tricky because like until the next day we figure out oh it doesn't work with
00:36this well so we have to like adjust it for the next day
