00:11all right guys this week we are going to do bacon cheddar biscuits they go great for breakfast
00:20they go great with any meal they are one of the ultimate breaded acrumans to your meals
00:27is acrimon the right word i don't know acrimon we're going to use it so the first thing you're
00:32going to do is you're going to go ahead and get a pan hot and we're going to hit our
00:36bacon
00:36you're going to drop the bacon on your already hot pan and let that fry up
00:55we don't need this bacon to be pretty so don't worry about keeping it in the perfect slice form
00:59we're going to bust it up in the bacon bits anyway so feel free to layer it in there crispy

01:09and you got to have a little bit of seasoning on there and we're going to go to our beach

01:13barbecue seasoning i've been using it on my truck for years and we're going to give it a light dust
01:18we don't want it to burn onto the bottom of the pan so we're just going to give it a
01:21little bit
01:22of flavor and we're going to come back and give it another light dusting this time with the ap seasoning
01:28now you can use any salt based rub for the ap seasoning and you can use any kind of sweet
01:34barbecue flavors for the barbecue rub now after you've crisped your bacon set it on a rack let it
01:42cool down you can either put it on a rack and let it drip or you can put it on
01:45a plate with paper towels
01:46either way you want to drain that grease off of it you want it to be crisp but not burnt
01:51so be careful
01:52cooking it next thing you're going to do is take two and a half cups of flour throw that in
01:56a large
01:57mixing bowl you're going to take baking soda salt and baking powder and then we're going to go ahead
02:04and whisk that together in the bowl
02:10i'll be putting the exact amount in the description below after you've sufficiently whisked your dry
02:16ingredients you're going to take butter vegetable shortening and some of your leftover grease from
02:22the bacon and you're going to go ahead and toss those in your mixture now you're going to take
02:33your hands and you're going to fold all that over on top of each other make sure you're using your
02:37hands
02:37you smash up that butter you smash up that shortening
02:43after you fold in your butter shortening and bacon grease kind of dig out a little hole there in the
02:50middle of your flour and pour in your buttermilk
02:54i went ahead and grabbed a spatula here so i can fold all the ingredients together get them good
03:02and mixed without making an insane mess
03:08after mixing your dough you'll want to liberally flour your surface make sure you get your hands as well
03:17as well and don't overwork your dough you want it to stay sticky
03:22so after you get your dough out you're going to want to pat it out and after you get it
03:27to about
03:28one inch thick you're going to want to take a roughly two inch biscuit cutter
03:36and go ahead and cut your biscuits
03:40now we're just going to continue to fold it repat it and cut it until we have gotten the maximum
03:46amount of biscuits out of it and we're not worried about our shapes and sizes being perfect for this
03:52particular exercise but it's going to leave you with roughly enough dough to get a baker's dozen
04:00now you want to take your bacon that you cooked earlier and just kind of come through just chop it

04:08kind of create bacon bits find the size that you want it to be you don't want it to be
04:13too big
04:14because you want it to fit on your biscuit now you can use your fingers you can use a knife
04:20I like to use the chef's knife and just bust it out
04:28that's about what I'm looking for there now you're going to take your biscuits
04:33just pop a little bacon on the top of it there you're going to have a little casualties over here
04:39on the sides it's fine
04:48next what you're going to do is you're going to take some finely grated
04:52vermont sharp cheddar cheese you want all that cheese flavor we're just going to boom plop it on there
05:10I would suggest grating this cheese yourself so you can get a good fine grate on it put as much

05:17there as you want to don't be afraid of it now your oven should have been preheating this whole
05:21time to 425 degrees I may or may not have put that part in the video so far but get
05:27your oven
05:27preheated and then we're going to throw these bad boys in for about 15 to 20 minutes until they're
05:33golden brown you're gonna have to keep an eye on them ovens may vary so we've baked our biscuits
05:38we've thrown the cheddar on them we've thrown the bacon on them and honestly we kind of screwed
05:43them up and redid them but that's fine we're done with our biscuits now and I got a guest taste
