If your biscuits aren’t swimming in butter, what are you doing? In this video, Julian shares this butter swim biscuits recipe, a classic Southern side dish that’s every bit as crunchy, buttery, and fluffy as it is easy to make. Biscuit batter bakes in an entire melted stick of butter, soaking it all up until they’re spongy inside and crunchy on top. Finish these off with a drizzle of honey and flaky salt.

00:00Your biscuits should be swimming in butter.
00:02Making these butter swim biscuits couldn't be easier.
00:04All you gotta do, heat your oven to 450 degrees.
00:06First, you're gonna add half a cup of butter to your baking dish and throw it in the oven.
00:09Let that melt and then take it out.
00:11While that's happening, whisk together your flour, baking powder, sugar, salt, and baking soda in a large bowl.
00:16Using a cheese grater, grate a quarter cup of cold butter into the mix.
00:19Toss that together and then add your buttermilk, stirring until it's combined.
00:22Next, you just gotta dump that batter into that baking dish full of butter.
00:25Make sure you spread it all the way to the edges.
00:27And then using a butter knife or bench scraper, cut the dough all the way through into nine equal squares.
00:31Throw it back into the oven and bake for 20 to 25 minutes.
00:34Once they're done, let them sit for a minute to soak up all that butter.
00:37Take them out and add some flaky sea salt.
00:39And make sure to serve this with lots of honey. It's delicious.
00:41They're smushy. They're crunchy on the top. They're salty. It's got everything.
00:45I think I'm just gonna sit here and eat these for the rest of the day.
