00:00Stainless versus nonstick, let's discuss.
00:02If you're looking to develop color
00:04by creating a sear at high heat,
00:05stainless steel is your best bet.
00:07You get better browning, therefore better flavor.
00:09Either one works, but the stainless steak
00:11is gonna have more flavor.
00:12Also, stainless skillets are better at creating a fond,
00:15which is the flavor created at the base of a skillet
00:17after a sear.
00:18This is particularly desirable if you're looking
00:20to deglaze the skillet to lift flavor and make a pan sauce.
00:23An acid like wine or citrus juice lifts the flavor,
00:25and those acids could ruin a nonstick finish.
00:28Plus, a nonstick skillet won't create as good
00:30of a flavor base, and deglazing is the best way
00:32to clean that pan too.
00:33Finally, a stainless steel skillet can move directly
00:36from the stove to an oven no problem.
00:38Nonstick skillets are better used for more delicate foods
00:40or starchy foods that tend to stick.
00:42Foods like pancakes, fish, potatoes, or eggs
00:44are more ideally prepared in nonstick versus stainless.
00:47And an obvious benefit to choosing the right pan
00:49for foods like this, clean up will be much easier
00:52in a nonstick skillet.
00:53Again, it can be done, but these are gonna taste better
00:55and this pan's gonna be a whole lot easier to clean.
00:57Nonstick or stainless, now you know the difference.
