00:00Hello and welcome to Matt's Casual Cooking and today for the last day of
00:07pasta month we're going to be making stir-fry beef and broccoli. Very fun and
00:13very tasty dish that you can make for any time of year. So we're going to go
00:18over all the ingredients, how to put together and let's get to it. Alright
00:24folks so before we go over the ingredients today you know it's just as
00:29easy as this recipe hit that subscribe button. It's a great way to get tasty
00:36food in your inbox every week so like subscribe hit that notification bell and
00:42let's get back to the video. Now for starters what we're going to need is 3
00:48tablespoons of soy sauce and you're going to want to use a reduced sodium one if
00:55you can. You're going to need 3 tablespoons of oyster sauce. You're going to need 2 tablespoons
01:02of chauzin wine. Hopefully I didn't butcher that too badly. Now if you can't find it what I suggest is
01:11I'm using just
01:12sake today or you can use any other sort of rice wine you want or you can use like dry
01:21sherry for this as well. So you got a couple options. You're also going to need 2
01:28teaspoons of granulated sugar. You're going to need 2 teaspoons of either tapioca
01:36starch or regular cornstarch. You're going to need 2 teaspoons of sesame seed oil. You're also going
01:45to need 6 to 8 ounces of sirloin and you're going to want to thinly slice that or if you
01:55can't find sirloin
01:56you can use like a strip or some ribeye for this as well and just cut it as thin as
02:03you can. You're also
02:05going to need 12 to 16 ounces of wide egg noodles. If you can't find wide egg noodles for whatever
02:16reason
02:16if they're out regular egg noodles are also fine for this. You're going to need 2 tablespoons of vegetable
02:26oil. You're going to need 2 to 3 garlic cloves and you're going to want to crush those. Sorry I
02:35forgot
02:35where I put it. You're going to crush those and if they're kind of big you're going to want to
02:40just chop
02:40those up. You're also going to need 1 to 2 bunches of broccoli and what you're going to do is
02:49you can
02:49see here as I've cut off the stems and remove the leaves and you just want to basically cut it
02:57down
03:00to the floret. That's that's what we want right here. Then you're also going to need 1 and
03:081 quarter cups of chicken broth or stock depending on what you want to do and you're also going to
03:16need
03:16for flavoring. You're going to need some ground black pepper and some kosher salt. So we're actually
03:26going to go over the noodles first here in a second and I will see that. I said we're going
03:32to go over
03:32the noodles first but we actually need to go over the beef first. So what you want to do is
03:38get your sugar
03:39into a bowl and you want a decent sized bowl. Then you want to add your oyster sauce, soy sauce
03:50and your wine initially in with the sugar and now whisk it
04:01until the sugar is dissolved or you just can't see it. It's still going to be kind of brown
04:08so you're not going to be necessarily be able to just give it a good couple whisks
04:14until you're pretty sure
04:17I don't really see some sugar at the bottom there. Just a couple little sprinkles and that's okay.
04:25Okay, then what you want to do is go ahead and add your starch in
04:30a little less on that one
04:49and go ahead and just stir to combine and then once that's done we're going to go over the next
04:54step so I'll see you in just a second. All right folks, so it's pretty well combined
05:00at this point. So what we want to do is go ahead and take your meat and add it in
05:07there
05:07all right and now add your sesame seed oil
05:21and let's take that lid off
05:25and a little bit easier to actually put in there
05:36all right that's pretty good. So now all we want to do
05:43is just coat the meat
05:46to get it all nice and coated
05:50and what we're going to do
05:52is we'll just let this sit off to the side
05:55for about 20 minutes. We just want the marinade
05:59get just really coat the meat
06:01and sit there. So go ahead and let it sit and then yeah now we're going to move on to
06:06the
06:08noodles. All right folks, so we're doing our noodles and you can see I've got my pot boiling
06:16and that's what we're looking for and what we're going to do with the noodles is we're going to do
06:19what's called blanching them. If you've never blanched noodles before you want to bring your pot to a boil
06:28go ahead and add your noodles in and then once you've done that
06:33you're only going to cook it for about one to three minutes because we just want the outside to get
06:39kind of soft but the inside to be
06:42hard and then once you're done there
06:46drain the noodles and then wash them very quickly
06:50with cold water because we won't stop the cooking process because we're going to need them later
06:54for cooking in a pan. So go ahead and do that and then I'm going to see you with the
07:03garlic.
07:09So we're on our next step. So what you want to do is either get out a wok
07:13or a decent sized stir-fry pan. I've got a 12 inch that I'm using today. You can use a
07:2010
07:20but I suggest probably at least like a 12 for this. What we're going to do
07:26go ahead and add one tablespoon of your vegetable oil. Go ahead and add your garlic.
07:36Now what you want to do is cook this on high till the garlic is nice and golden brown for
07:43just about
07:45three minutes. That's all we're going to do. We don't want to do any more than that.
07:50Then once we got that going we're going to move on to get your to the broccoli. So get that
07:55ready and I'll
07:56see you in a little bit. All right folks. So this stuff's starting to brown pretty nicely.
08:05So you kind of want to move fast especially since you're over high heat. Go ahead and add
08:11your broccoli into this. Start stirring. And what we're looking for is for about three to five minutes
08:19we just want to cook the broccoli until it's just kind of nice and firm but kind of soft is
08:27all we're
08:28looking for. And then once that's done go ahead and transfer it to a plate or I'm going to transfer
08:37it to a bowl because we're going to need to add our meat as well. So go ahead and do
08:42that after about
08:43five and I'll see you at the next step. All right folks. So add your last remaining tablespoon of
08:56oil to this and it's already pretty hot so it's already going to move around quite a bit for what
09:01you need. And what we're going to do now slowly add the meat and your marinade.
09:19Hear that sizzling? Be very careful. Still very hot oil. So go ahead and
09:31move it around evenly. And what we're going to do is leave it on high and we're going to cook
09:39it
09:40for about three to five minutes or until the meat is nice and cooked through. So go ahead and do
09:47that
09:47and then once you're done add it to the bowl with your broccoli in it. Go ahead and do that
09:54and I
09:55well we'll see you at the next step. So now that we're done with the beef it's nice and seared.
10:04What we're going to do is again we're going to add the chicken stock or broth into the pan
10:13and we want to make sure it's boiling and then go ahead and add
10:19a little kosher salt. I just like to add a little bit. I don't necessarily need to taste it. I
10:25feel like I've
10:26always got a pretty good grasp on how much I like to do. And just
10:31just a little bit probably like two to three teaspoons-ish of that. And remember your noodles?
10:41Well go ahead and take your noodles and just be careful. Probably actually
10:49I just like to take them by the handful. Shoot. And just add them back in so I don't have
10:56a lot
10:56splash. Now they are kind of cold so there's not really a lot of burning that we need to worry
11:03about.
11:13Okay so now what you want to do is go ahead and cook this in the broth and what we're
11:21looking for
11:22is basically just cook it until the broth has boiled away because the noodles are going to absorb
11:29a lot of the liquid and they're going to cook quite nicely. So go ahead and do that and then
11:38combine them
11:38with your beef and broccoli. And I will see you in a little bit. All right folks so you're done.
11:48You can see
11:50add some nice chunks of beef here. Got our noodles. Got our broccoli on that very nice sauce. And you're
12:02really going to enjoy this meal. It's really going to fill you up and make your tummy really scream for
12:08more. If you did enjoy making this today, like, subscribe, share, please leave a comment or an emoji
