00:04My name is Donald Brophy, I'm one of the owners of the Highlands Restaurant Group and we are
00:08here having a rooftop party in Nolida. My inspiration for today's party came from a
00:15summer solstice party that my aunt used to throw back in the day in Ireland. In Ireland and Scotland
00:21and in the Highlands of Scotland especially, people aren't used to like eating and partying
00:26outdoors so when the weather is nice they're not afraid to bring all the furniture from indoors
00:31outside. That's what I always do with my rooftop parties, I always try to make them bring elements
00:36of the indoors outdoors to kind of make people feel a little bit kind of weirded out by it.
00:42Always incorporate fresh flares, they're the most important. Fresh flares and lighting,
00:46it always makes people feel so much more relaxed and it always just makes the room seem so much
00:51more alive. One of my favourite and I guess one of my most inexpensive decorating tips for an outdoor
00:58party would be fabric. It's a cheap way of making things seem very polished and luxurious. You know,
01:04the whole theme was the Midsummer Highlands fling, so I wanted it to be very whimsical and eccentric.
01:10We got some beautiful black grouse whiskey, karoon, gin and some Anok whiskey from some of our partners
01:18on Highlands and with those we brought three of our best cocktails from our cocktail program on Highlands.
01:24The food, we stayed with salads. The tonight's party is an early evening and so a lot of people
01:30will have dinner reservations afterwards so we don't want to lay them down too much,
01:33especially on a rooftop when people are sipping cocktails. You want to just have light fare.
01:37So we have a beautiful watermelon feta caviar salad, we have a grilled peach balsamic arugula salad
01:44and we also have a burrata with heirloom tomato salad. Just keep it simple, keep it local,
01:49keep it organic and you can't go wrong. People will appreciate it.
01:59So I hope you enjoy the party. Thank you very much for coming and we hope to see you at
02:04Highlands.
