00:01I'm Lucy Fink. I'm a video producer at Refinery29. I flew down to Costa Rica and I'm going to see
00:07if I have what it takes to be a gourmet coffee roaster. This is Lucy for Hire.
00:15It's no secret that Costa Rica is known for its coffee and Cafe Brit or Brit Coffee was Costa Rica's
00:21first ever gourmet coffee roasting company.
00:24I visited their plantation and roastery to learn how a bean on a bush becomes a beverage.
00:30Your first challenge is picking coffee beans.
00:35So what are you holding?
00:37Ah, this is high technology.
00:40So let me show you.
00:42You see, the harvest in Costa Rica is in the dry season from December up to February.
00:47But in the same bush, not all the coffee berries arrive at the same time. The red ones are the
00:52ones ready.
00:52This is the best outfit ever.
00:55You see, you can go shopping like this.
00:57Yeah.
00:58And you have hands free.
01:00This is what they need at grocery stores.
01:04First, we walked through the nursery to gather our beans.
01:07All right, here I go.
01:07This is for small people, I know.
01:10And then you should pick the red ones only and they will fall immediately in the basket.
01:14Oh, there we go.
01:15You have to pay very close attention and really squat down there to find the best beans.
01:19It's like a full body workout.
01:22You see, the good selection of the red beans is one of the most basic things to make a gourmet
01:28coffee cup.
01:29Right.
01:30You see, this one is very juicy.
01:33Wow.
01:33Wow.
01:36That is good.
01:40Oh, those coffee beans are gorgeous.
01:45A spider web.
01:47We should go the other way.
01:48Well, this way.
01:49And since there might only be a few ripe ones per bush, we had to really get ourselves immersed into
01:55the nursery.
01:55We are just foraging for coffee beans right now.
02:00Well, you're doing a very good selection here.
02:04All right.
02:05I've got a basket full of beans.
02:07Yes, you did.
02:08So now, once you have your coffee, it's time to roast it.
02:12Let's roast it.
02:14Your second challenge is roasting the coffee.
02:19So these are ready for roasting.
02:21Those are ready for roasting.
02:22Let's roast.
02:23Very good.
02:24We could do a light roast, a medium, a dark, or an espresso roast.
02:28I'm really tired, so I'm going to go with espresso.
02:30Very good, very good.
02:31So that's what we're going to do right here.
02:33The roasting process takes between 8 to 12 minutes, depending on the type of roast.
02:37Move it a little bit.
02:40We closely monitored the beans by checking, and checking, and checking again, and finally there were about 10 seconds left.
02:5110, 9, 8, 7, 6, 5, 4, 3, 2, 1.
03:00All right, check this out. Very good.
03:03All open, yes.
03:05So we're going to let the coffee right here repose for at least 8 hours, all right?
03:11And then we could try the coffee.
03:12So I'll see you in 8 hours.
03:13Very good, I'll see you in 8 hours.
03:15I didn't actually leave for 8 hours.
03:17He had some espresso beans that were already reposed and ready to go.
03:21And then it was time for my third challenge, coffee cupping.
03:25First, we took beans from each type of roast and ground them, and then we poured hot water directly onto
03:30the grounds to brew them.
03:31I thought it was weird at first that we weren't using a filter, but he explained to me why we
03:36do this.
03:36If you use a filter with paper or something like that, that's going to absorb every flavor of the coffee.
03:41So this is the right way to make the cupping of the coffee.
03:44Of course you cannot drink this, right? So we're going to do this process.
03:48Oh, so we remove the grounds.
03:49Exactly.
03:51Coffee cupping is the process of deeply sniffing.
03:54Smells good.
03:55And then loudly slurping coffee to measure the different aspects of its taste.
04:00This allowed me to pull out all of the different flavor notes in each type of roast.
04:05And after slurping, you spit it into a spittoon.
04:08Very dark.
04:10My first cupping experience.
04:12So your final challenge is going to make the cappuccino, the three layer cappuccino.
04:16And we're going to make it with this roast.
04:18All right?
04:18All right.
04:19Very good.
04:19Let's do it.
04:23Just add the flavor.
04:24First, I chose to flavor my coffee with hazelnut.
04:27There you go.
04:28Wait, wait.
04:29What are you doing?
04:30Oh, I thought you meant...
04:31No, no, no.
04:31That's going to affect.
04:33Oh, no.
04:34Should we get a new cup?
04:35Okay.
04:35And then I blew it.
04:37There you go.
04:38Perfect.
04:39Perfect.
04:40And then we steamed the milk to get foam and added the foam as our first layer, followed
04:45by the liquid milk.
04:46I'm not a very clean barista.
04:49Next, we turned our espresso beans into grounds.
04:54Wow, that's silky smooth.
04:56Pressed the coffee.
04:58One.
05:00And brewed an espresso.
05:01And after carefully pouring it in...
05:05There you go.
05:05Keep going.
05:06I touched the edge.
05:07No worries.
05:08Just don't stop.
05:10Okay.
05:10Not that carefully.
05:12I had my brutiful three-layer cappuccino.
05:16Wow, I did not know what to expect.
05:18This is beautiful.
05:20Damn.
05:23Would you hire me?
05:24I will hire you, yes.
05:26Perfect.
05:26It's official.
05:27Official.
05:27Very good.
05:28The newest employee of Brit.
05:32As they say in the coffee business, smell you later.
05:36Okay, they don't actually say that.
05:42I'm Lucy Fink.
05:43I'm a video producer at Refinery29.
05:46But every so often, I like to try other people's jobs.
05:49Today, I'm at the Ben & Jerry's factory in Waterbury, Vermont.
05:52And I'm going to see if I have what it takes to create my very own ice cream flavor.
05:56This is Lucy for Hire.
06:02I'm with Kirsten.
06:03I'm with Kirsten.
06:03She's a principal food scientist at Ben & Jerry's and an all-around flavor guru.
06:07And today, she's going to help me create my very own ice cream flavor.
06:10So your first challenge today is invent the flavor.
06:16I love pizza.
06:20Would you ever make a pizza flavor?
06:22I think that's a little too crazy.
06:23We're cutting the pizza idea.
06:25It's 90 degrees outside right now, so something cool and refreshing and summer feeling would
06:31be great.
06:32My favorite summer drink in the morning is a coconut milk latte.
06:36I don't know if there's anything we could do there.
06:37I think that would translate really well into ice cream.
06:40We got it.
06:41Awesome.
06:41I invented the flavor.
06:45My second challenge was to actually make the flavor.
06:48So we went off to the local market to buy all the ingredients.
06:52We got raw coconut chips, chocolate chunks, a ton of coffee grounds, cold brew extract, whole
06:59coconuts, and more.
07:05Back in the test kitchen, we toasted the coconut chips, made a coconut flavored base, and a
07:10coffee flavored base, mixed them together, and taste test it along the way.
07:15I feel like it needs more.
07:17A little more?
07:17Yeah.
07:18And then we tried it again.
07:20Cheers again.
07:21And tasted it again.
07:23Cheers.
07:24There we go.
07:24Bottoms up.
07:25Five.
07:26Woo!
07:26And eventually, we piped it out into our sample pints.
07:29Woo!
07:30Overflow!
07:31I think we're good.
07:32On pint seven.
07:34Finally, our creation was complete.
07:40Yum.
07:43Your next challenge is gonna be to bring your ice cream to the marketing team and have a taste
07:48test with them.
07:51It's good.
07:52Hey guys.
07:53I made some coconut coffee ice cream, but I need you guys to taste test it and let me
07:59know if it's good or bad.
08:01And just be honest.
08:03I won't be offended.
08:04Mmm.
08:05I mean, it's cool because you start with one bite and it might just be the coffee and then
08:08a different one is the coconut pieces, so it's kind of like a nice little journey.
08:12You can't come here and take our job.
08:14Exactly.
08:14Awesome.
08:15And there's chocolate chocolate.
08:16Yay!
08:16Yay!
08:16So the taste test is a success.
08:19This is a success.
08:20Now that you've wowed everyone with their creation, your next challenge is to come up with a crafty
08:25name and branding for it.
08:29Beachside buzz with the coconut.
08:31Mmm.
08:32Tropical buzz.
08:33It's an interesting angle.
08:34A latte buzz.
08:37Brews, buzzed, and nuts.
08:40We are on the edge there of something very bad, people.
08:44Coco cold brew.
08:46Coco cold brew.
08:47I like that.
08:48Choco cold brew.
08:50Choco cold brew.
08:50Choco cocoa latte.
08:52Choco cocoa latte is pretty good.
08:54Fink's drink.
08:55Fink's cocoa.
08:56Culver drink.
08:57Yeah.
08:58Coco Joe.
08:58A whole latte.
09:00Cocos.
09:01Orange is the new crack.
09:02Love you a latte.
09:04Espresso yourself.
09:06All right.
09:07No nuts.
09:08No nuts.
09:08No nuts.
09:09Nuts are out.
09:10This is a little boring.
09:11Doesn't say anything about coconut.
09:13Too long.
09:14Strike that.
09:14Let's get rid of the one that says what it is.
09:16This doesn't do it for me.
09:22Okay, ready?
09:23Option one.
09:25Crackin' coconut latte.
09:27One, two, three, four.
09:28Option two.
09:30Coco Joe latte.
09:31Three.
09:32You're the tyrant.
09:34You're the tyrant.
09:35You're the tyrant.
09:35Oh, wow.
09:38I was going to vote for Crackin' coconut latte.
09:46And just like that, I had invented my own flavor.
09:50I was given my very own Ben & Jerry's lab coat.
09:53We cracked some coconuts just for fun.
09:55No!
09:55And I even brought a few pints home for my friends and family.
09:59All in all, there is a lot of work that goes into creating a new ice cream flavor.
10:03And today, I became an honorary Ben & Jerry's flavor guru.
10:21I'm Lucy Fink.
10:22I'm a video producer at Refinery29.
10:24But every so often, I like to try other people's jobs.
10:27Today, I'm in Vail, Colorado, and I'm going to see if I have what it takes to be a pro
10:31snowboarder
10:32for the day.
10:33This is Lucy for Hire.
10:40I'm Kimmy Fasani.
10:41I'm a pro snowboarder for Burton Snowboards.
10:43And I was just awarded the Rider of the Year for Transworld Snowboarding.
10:48Your first challenge is to gear up.
10:51Making sure you have the right product is going to make you feel way more comfortable out on the slopes.
10:56I took Kimmy's direction and geared up appropriately.
10:59First, a base layer to keep me nice and warm.
11:01A sweater to layer up.
11:03A bib so I can look really cool.
11:05A jacket, the most important layer.
11:08A hat to lock the heat in.
11:10Socks to keep my feet dry.
11:12Gloves, particularly the oven mitts to keep my hands really toasty.
11:16And boots, the most essential part of my gear.
11:18Making sure they're comfortable so I can enjoy the whole day ahead.
11:22Once you have your outerwear all set, it's time to get you the proper board.
11:25Kimmy!
11:26Hey!
11:27Hi!
11:28Good to see you!
11:29You too! How do I look?
11:30Oh, you look perfect!
11:31You look so good!
11:32You look great!
11:33Thank you!
11:33I love this blue.
11:34That's what it's about, looking good.
11:35Let's go get a board.
11:36Yeah, let's do this.
11:38The first thing to consider when you're looking at boards is size.
11:41Making sure that you have a board that's right under your chin is perfect.
11:44Perfect.
11:44So here's all the women's boards.
11:46And so this is what I think that's going to be good for you today because it's the step
11:52on.
11:52So it's going to be really convenient for in and out access for your bindings.
11:56And then the height, go ahead and put that up there again.
11:58Yeah, it's like right under your chin so I think that's perfect.
12:01Perfect!
12:02Awesome!
12:03My first impression of Lucy is that she's super ambitious, really motivated.
12:06I think she's going to do great out there.
12:08It's going to be an awesome day on the mountain.
12:10Your second challenge is to fuel up.
12:13Fuel up, as in food?
12:15Yeah.
12:15Okay.
12:15Like what you do to maintain your energy on the hill.
12:18What do you do?
12:18I do a lot of things.
12:20I always have snacks in my pocket and I actually brought you a handful of snacks.
12:23You brought me snacks?
12:24Yeah, so that you can have kind of a variety of Clif Bars like an energy block.
12:29Whoa!
12:29A builder block, high protein, and then a little mojo which is like nut based bar.
12:33Amazing.
12:34And that way you have little bites throughout the day.
12:35Because I always find the lighter meals you eat, the more it's going to be a long lasting
12:40energy, rather than sitting down for a burger and feeling really weighed down.
12:44Smart.
12:44So these are for me?
12:45Yeah.
12:45Oh my gosh.
12:46After we fueled up, it was time to shred.
12:49So, this would be an uncool way to carry your stuff.
12:53All right.
12:55Now I'm cool.
12:57I'm really excited to be out on the slopes with Lucy today because I get to show her all
13:01the foundation building skills that she'll need to get up the hill and down the hill.
13:04I haven't been on a board in about 10 years.
13:07So once I'm on, what are the major pressure points I should be putting in my feet?
13:12So your heel edge is going to be in control of all of your heel side turns.
13:16It's also control for stopping.
13:17And then toe side edge is going to be for your toe side turn.
13:22And anytime that you feel like you want to kind of angle across the mountain, you just
13:26go a little more on your toe side and you'll be able to make a sharper turn.
13:29We rode the chairlift up together and just like that, started shredding.
13:34And what's even better?
13:35I was pretty good, if I do say so myself.
13:38I landed some jumps, took some tumbles, and even face planted after trying to throw and
13:44catch my GoPro stick.
13:49We had a great time.
13:52Lucy was so good.
13:54She acted like a natural.
13:55It was like she'd never taken any time off of this sport that she hasn't done in years.
14:00If I were the one doing the hiring, I would definitely have Lucy as a pro snowboarder.
14:04So your final challenge is cool down.
14:08So what do you do to cool down?
14:09I, for me, I like doing some yoga.
14:12I like stretching.
14:13Taking an ice bath will really help replenish your muscles so that you aren't sore tomorrow.
14:18But an ice bath after this situation?
14:22Back in my room, I took Kimmy's cool down advice.
14:25I did a ton of stretching and even some meditative yoga.
14:30And when I was ready, I finally prepared that ice bath Kimmy told me I should do.
14:36Since my legs were the most overworked part of my body on the slopes, I slipped in from
14:40the waist down.
14:42And I tried my very best to relax.
14:47As my snowy snowboarding day came to a close, I realized that being a professional snowboarder
14:52is a lot harder than Kimmy makes it look.
14:54It takes serious practice, discipline, and physical strain to perfect.
14:59But spending the day with the Rider of the Year was a real privilege.
15:03Kimmy made me feel like I could be the next big pro.
15:11I'm Lucy Fink.
15:13I'm a video producer at Refinery29.
15:15But every so often, I like to try other people's jobs.
15:18So today, I'm hanging with my dad, Jimmy Fink, to see if I have what it takes to do his
15:22job.
15:23This is Lucy for Hire.
15:29My name's Jimmy Fink.
15:31I've been a New York radio personality for about 45 years.
15:35I also worked for Rolling Stone magazine, producing a nationally syndicated radio show,
15:40and interviewed just a ton of people during that time.
15:43Paul McCartney, Billy Joel, David Bowie, all different kinds of people, not just music personalities.
15:50I'm always thanking my listeners.
15:52I know that you have so many different ways to listen to music now.
15:56And the fact that they have chosen to listen to conventional radio is very humbling and heartwarming.
16:03I think Lucy is so used to talking in public and is just very, very friendly and natural.
16:09So she'll do fine on the air.
16:11Yeah.
16:11Your first challenge is to warm up and find your radio voice.
16:15Here's how it goes.
16:17Bing mong, bing mong, bing mong, bing mong, bing.
16:20Oh.
16:22Bing mong, bing mong, bing mong, bing mong, bing mong, bing.
16:25Oh.
16:26Wait, are you getting higher?
16:28Yeah.
16:28You try to get a little bit higher each time.
16:30And the ming mong really kind of gets your lips flapping in your mouth already.
16:35Bing mong, bing mong, bing mong, bing mong, bing.
16:39Oh.
16:40Bing mong, bing mong, bing mong, bing mong, bing.
16:44Oh.
16:45Bing mong, bing mong, bing mong, bing mong, bing mong, bing.
16:49Oh.
16:52That's it.
16:53And you have to really move your mouth.
16:55Yeah.
16:55You have to move your mouth because you've got to get your lips and your tongue and everything
16:57moving.
16:58I think for me the hardest part is loosening up the lips because I will sometimes stumble
17:04over something.
17:05So.
17:05Brr.
17:06Brr.
17:06That's good also.
17:07That's good to do that.
17:08Brr.
17:10You spit on me.
17:11I'm sorry.
17:14Brr.
17:16Your second challenge is to learn how to operate the control board.
17:21Okay.
17:21This runs the entire radio station.
17:24My dad walked me through the various knobs and dials and it seems complicated but once
17:29you know what you're looking at it's pretty easy.
17:32So quiz me.
17:33So quiz you.
17:34So say the song was ending and you're ready to go on the air.
17:37What's the first thing you're going to do?
17:43Hello.
17:43Good job.
17:45Did it.
17:46If you wanted to add a song into the system what would you do?
17:50I would go to the library.
17:52Yes.
17:54Choose Lucy in the sky with diamonds.
17:55Good choice.
17:56And I'd put it right after my empty voice track.
18:00Good job.
18:01Perfect.
18:01So say you're on the air and the song is over and you're ready to talk.
18:06What are you going to do?
18:07I wait for the song to end and then fade it down.
18:13Very good.
18:14You got the mechanics right except over here that's the CD player and we're not playing
18:17the CD.
18:18We're playing songs from here.
18:19Oops.
18:20Oops.
18:21Okay.
18:22So it's not that easy.
18:24That's it.
18:25Perfect.
18:26Good job.
18:27Good job.
18:28Your third challenge is to go live.
18:30Oh no.
18:31Yeah.
18:32But we can't do it in here because this is the production studio where I just taught you
18:35everything.
18:35Okay.
18:35We have to go into the live studio.
18:37Alright.
18:39After warming up my voice and understanding the control board it was time to put everything
18:43I learned to the test.
18:46We're here.
18:47We're here.
18:47Once I was in the live studio I logged into the system, sound checked the equipment,
18:52and prepared for my very first live run.
18:56Should my lips be touching the mic?
19:00Dad.
19:01Huh?
19:02No.
19:03You should just be right up to it but not touching it.
19:06Okay.
19:07Okay?
19:07There are three things you need to do.
19:09First, you have to be conversational.
19:12Second, say who you are.
19:15And lastly, you need to introduce the song.
19:18Okay.
19:1930 seconds.
19:20Headphones on.
19:21The song is about to end.
19:23A little promo is going to play and then you're going to talk.
19:2520 seconds.
19:27Are we ready?
19:28Yeah.
19:28Here we go.
19:29Five seconds.
19:30Ah!
19:33Hey everyone.
19:34It's me, Lucy Fink, Jimmy Fink's youngest daughter, here today with him at 107.1 The Peak
19:41in White Plains.
19:43Here I am.
19:44How am I doing?
19:45Send us an email.
19:46Let me know what you think of my voice.
19:48Or don't.
19:49Maybe don't do that.
19:50Next song I'm going to play for you was one of my picks.
19:54This is one of my favorite artists, Ed Sheeran.
19:57I actually saw him live at Madison Square Garden with Taylor Swift years back.
20:01Here's Ed Sheeran's Castle on a Hill.
20:06I did it!
20:08How was it?
20:09Good.
20:10It was good?
20:11Yeah.
20:12Your final challenge is to take a phone call from a listener.
20:15Okay?
20:16Okay.
20:16The song's about to end.
20:18The phone doesn't ring in the studio, so you've got to keep your eye on that Fink.
20:21When it's blinking, that means someone's calling.
20:23He's calling now!
20:23There he is.
20:24Okay.
20:24Here we go.
20:27Hello.
20:27You're on the air.
20:28Who's speaking?
20:30Hi.
20:30I'm Chris from White Plains.
20:31Is this Lucy Fink?
20:32Hi, Chris.
20:33Yes, this is Lucy Fink.
20:35How you doing?
20:36Great.
20:36I love the peak.
20:37I'm a big fan of your dad.
20:39Oh, awesome.
20:40That's incredible.
20:41Yeah, this is my first time talking to a listener.
20:44Well, you're doing pretty well.
20:47And I have a question for you.
20:49Yes, go ahead.
20:50How do you come up with these ideas that you have in your videos?
20:54I actually read every single comment that I get on my YouTube videos, and most often,
21:00I'm getting my ideas for new videos from commenters.
21:03Oh, well, that's awesome.
21:04You do a great job on the videos.
21:06Thank you so much.
21:07It's been a pleasure speaking with you.
21:08This was my first and only and best listener call.
21:13Hope to hear you next time.
21:14Thanks, Lucy.
21:16Thanks.
21:16Have a good one.
21:17And up next, we're going to listen to Lucy in the sky with diamonds on the peak.
21:25You did it.
21:26I did it.
21:27Good job.
21:28How was I?
21:28Video killed the radio star.
21:30You're the radio star today.
21:31Yay!
21:34Lucy did great.
21:36Somebody from White Plains actually called in who watches her videos.
21:40It's unbelievable.
21:41The Think Radio legacy is definitely in good hands.
21:45Lucy could be on the air for 45 more years.
21:48I had so much fun with my dad today.
21:51I would love to be a radio DJ.
21:54How'd I do?
21:55You have a face for radio.
21:57You too.
21:58Thanks.
21:59I've always been a daddy's girl.
22:01So spending an entire day at my dad's office made me so incredibly happy.
22:05And who knows?
22:06Maybe someday I'll be carrying on the Think Family radio legacy.
22:09So be sure to listen out for me at 1071thepeak.com.
22:13I'll see you after this.
22:13I'll see you after that.

22:14I'll see you after that.
22:16You
