00:35Rosie and Josh went on to found Sugarfina, a candy boutique for grown-ups.
00:40After carefully sourcing artisan candy from around the world, Sugarfina quickly rose in popularity
00:46and now has locations across the United States and Canada.
00:50This particular treat, the XOXO Dark Chocolate Bar with Baby Champagne Bears,
00:55is made by renowned chocolatier Jean-Marie Albuin in Las Vegas, Nevada.
01:01Here, Jean-Marie and his team meticulously make chocolate by hand.
01:06And it all starts with a bean.
01:0830 pounds of beans to be precise.
01:12These cocoa beans have been sourced from all over the world to create a unique flavor in the final chocolate.
01:18This mixture of beans is fed into a roaster and cooked for 45 minutes.
01:24The machine continuously turns to ensure the cocoa beans are never burnt.
01:29Once they are ready, the beans are emptied onto a tray with holes in it.
01:33They are then carefully sifted so that any small, unwanted fragments are separated from the batch.
01:41The husk must be removed before the beans can be ground up into chocolate.
01:45This machine, called a winnower, is able to remove the husks while simultaneously starting to cut up the chocolate.
01:53The beans are fed through a tube into the winnower and suction strips away the husk, expelling it into a
01:59bucket on the floor.
02:01The cut-up chocolate ends up in this square container.
02:05Time to get grindin'!
02:06The chocolate is fed into the top of a three-roll refining machine,
02:10which uses marble rolling pins to grind the chocolate down to a fine consistency.
02:16But this still isn't fine enough to make chocolate.
02:19That's when this baby comes into play.
02:21This machine is called a melanger, and they have been used since the 1950s to make chocolate.
02:28The trick? Repetitive pressure and heat.
02:30Two 600-pound wheels crush the ground chocolate into a fine powder,
02:36while suspended heat lamps keep the mixture at just the right temperature.
02:41Over the course of several hours, the melange continuously turns the chocolate,
02:46which forms into a thick liquid consistency over time.
02:49And melted cocoa butter is added to aid in texture.
02:53Trust us, it smells amazing.
03:00Next, the chocolate is transferred into a melting tank that churns the chocolate for a silky smooth texture.
03:08Once the proper consistency is achieved, the chocolate is poured into a bucket and taken to be poured into molds.
03:17Clean molds are fed through a machine, and then the exact amount of chocolate is dispensed, filling the mold perfectly.
03:25After, the molds are rattled to ensure there are no air bubbles.
03:31Now, Sugarfina's signature baby champagne bears are added by hand to ensure each bite is a unique explosion of flavor.
03:40One by one, the chocolate bars are fed into the cooling compartment, which is set to 58 degrees Fahrenheit.
03:47A conveyor belt moves the chocolate up and down until they're fully hardened.
03:52After that, just flip the mold over and they pop right out.
03:56They're almost ready.
03:58The chocolate bars are placed by hand on a conveyor belt and fed through a machine that seals them in
04:05a thin layer of plastic.
04:07Now it's time for the pretty packaging.
04:11A few creases, a fold here and there, and there you have it.
