00:11to age a wheel of Parmigiano-Bergiano.
00:13And this is a highly controlled, highly identified product that's well-known for Italians.
00:18It's well-known for Italian farmers.
00:19So the farmers, they go to Clento Emiliano, CREDEM, and they give them collateral.
00:24The cheese in the cheese banks are now melting because of climate change.
00:27CREDEM is about to install some high-tech infrastructure for cooling and other kind of systems here.
00:33But more importantly, the cows.
00:35Cows aren't making as much milk because it's so hot, they don't want to feed on the grass.
00:40And as a result, the quality of milk is not only bad, but so is the quality of milk
00:43because they're eating less and they're not getting their nutrients.
00:46So we are going to see the ill effects of climate change coming forward in the next years to come.
