00:10Today, we're going to make one of those dishes where you think, we're going to eat chicken,
00:14but in the end, you also end up eating half a loaf of bread.
00:24Chicken, tomato, a few vegetables, and a little bit of patience.
00:29Patience is the key ingredient in this recipe, and it's well worth it.
00:40Here, we don't have any secret ingredient.
00:43The secret is that everyone does their job well.
00:50This is a good time for you to grab a pen and paper if you want, and calmly write down
00:55the ingredients.
01:00The preparations will be very simple.
01:02Take an onion and chop it into very small cubes.
01:06For that, my trick is to cut it into slices.
01:10Then make a few cuts so you get something like sticks.
01:13And that way, when you turn them, you cut them all at once.
01:19You end up with very small cubes that will melt into the sauce.
01:28We're also going to chop two or three cloves of garlic into small cubes using the same technique.
01:34And half a bell pepper, or a whole one, preferably red.
01:38What we're going to do is cut them into sticks, then chop them all at once.
01:42It's just that the technique works for everything.
01:46Then we prepare the chicken.
01:48I'm going to use these drumsticks, but you can use whichever you want.
01:53Sprinkle a good amount of salt on top.
01:55And also black pepper, what they call seasoning the chicken with salt and pepper.
02:01Once you have it, give it a few turns so everything is well coated.
02:09Now, in the pot where we're going to cook it, I pour a good amount of oil.
02:16Once it's hot, let's add the chicken.
02:21We'll place the pieces, making sure they get browned.
02:27So we're going to place them all on top, and then we have to keep turning them so they brown
02:34on all sides.
02:41Once they're browned on all sides, we set them aside on a plate.
02:46But let's stay with the pot because here we're going to add the onion, the garlic, and the bell pepper
02:53from earlier.
02:54Now we cook it on low heat until it gets soft.
02:58I know you can do this on high heat and stirring, but here we're looking to make it worthwhile.
03:04And doing it on low heat gives it flavor.
03:08I'm telling you, it totally changes the sauce.
03:12Soft veggies.
03:14Time to give it an extra touch of flavor.
03:16You can do that by adding a bit of paprika.
03:20But if you add it, stir it quickly so it doesn't burn.
03:26Then add a glass of broth, stock concentrate, or wine.
03:31It can be white or red.
03:33They all work great.
03:37Cover it and let it reduce for four or five minutes.
03:42Next, let's go with the tomato, which is today's magic.
03:46One kilo of crushed tomatoes.
03:49Just like that.
03:51All of it.
03:52No need to overthink it.
03:54We adjust the seasoning with salt.
03:58We add a bit of pepper, which always enhances the flavors too.
04:03And we adjust the acidity with a little bit of sugar.
04:07Don't overdo it.
04:08Half a teaspoon will be more than enough.
04:11Enjoy your meal.
04:14We're looking for tomato that tastes like tomato, not like caramel.
04:26A bay leaf.
04:28And we're going to cook our sauce for at least 10 minutes.
04:36Give it a good stir every now and then so it cooks evenly.
04:43And then we move on to the chicken.
04:46We put these drumsticks back into our sauce.
04:52And it's very important, once you have it inside, to also make use of the sauce that's left on the
05:00plate where we had the chicken set aside.
05:05Careful, that's not dirt.
05:07It's real flavor.
05:11The next step is to cook everything together.
05:14Do it patiently.
05:16In total, about 40 minutes at least.
05:20And stir like this from time to time.
05:23Look how it turns out.
05:24All mixed together.
05:26At this moment, the pot is already telling us, now it's ready.
05:36This is the problem with the recipe.
05:38You already start wanting to grab some bread.
05:43All you have to do now is leave it uncovered so the sauce can reduce a bit.
05:50This is one of those dishes you don't have to babysit.
05:53You just leave it there calmly, keep an eye on it a little, and that's it.
06:00Now the only thing left is to call the family, because it's time to eat.
06:11We can stop pretending that you can eat this without bread.
06:23It's not just dipping the bread.
06:26It soaks up and absorbs all the flavor.
06:29It's crazy.
06:35The chicken, tender.
06:37The sauce, so much flavor.
06:51Tell me, are you also one of those who, in the end, to clean the pot, grabs a piece of
06:57bread and wipes it all over until it's almost shiny?
07:01Or is it just me?
