00:00Now you can add the garbanzo beans.
00:03Beans, beans, beans, beans.
00:05Hi, I'm Natasha.
00:07I'm Mabel.
00:08Welcome to my kitchen sink.
00:09Today we'll be making chana masala and chapati.
00:12It's one of our family favorites.
00:13A true classic.
00:15We already had most of the ingredients,
00:17but you can make this for under $10.
00:20I'm going to start making the chana masala
00:22and chopping all the vegetables.
00:24In our family we actually call it chole,
00:26but the common name is chana masala.
00:28It's definitely a family dish for us.
00:30You know, we would eat it when we would go visit our grandma
00:32during the holidays with all our cousins.
00:34She always made it at least once
00:36because our entire family loves this dish
00:38and it's always a crowd pleaser.
00:41We got this recipe from our mom.
00:43It's kind of been modified as it's been passed down,
00:46so my mom has made some alterations to it.
00:49I'm usually the chopper, but today I am on the dough duty,
00:53so she's going to be chopping.
00:55I'm so nervous.
00:57So many people watching.
00:59I hope I can make everyone proud.
01:02You've already failed me.
01:03Megal definitely chops things better,
01:05so if it has to do with, like, garlic or onions,
01:08I always just give her that task.
01:10Yes, otherwise I'm a backseat cook
01:13and I'll hover while she chops onions.
01:14She really doesn't like large pieces of onions.
01:17I hate it.
01:18The last time we made this was when our older sister was visiting,
01:22so we had as a family.
01:24We like to kind of have a little New York family gathering.
01:29Today we are doubling this recipe so we can eat it all week.
01:37So I just finished chopping all the vegetables,
01:40and now I'm going to start making the dough for the chapati.
01:54So all the ingredients are in,
01:56and now for the part that I hate,
01:58mixing everything together and making a nice, smooth dough ball.
02:01And yes, my hands are clean.
02:10Dough ball all done.
02:12Natasha, where are you?
02:14There are a fair amount of spices that go into this and ingredients,
02:17so sometimes it's easier for me to read them off to her
02:20and tell her to add more or you added too much.
02:25Our favorite part of our kitchen is our spice cabinet.
02:29It's very fun.
02:30Which resides over here.
02:32We have a lot of spices in our cabinet.
02:35It's pretty much a reflection of our mom
02:38because we have it organized exactly like hers.
02:40Shout out to our mom for being the best cook ever
02:42and teaching us everything.
02:45We gave her such a hard time.
02:46She did a great job teaching us before we moved to New York.
02:49Yeah.
02:50It was worth it.
02:53Our dream kitchen would have a huge island with storage in it.
02:57We would have probably more than one oven.
03:00And what is it?
03:01A French door fridge?
03:02Yes.
03:04Granite countertops.
03:05Granite countertops.
03:06Stainless steel everything.
03:07A dog running around the bottom eating the scraps.
03:10Ideal.
03:13I think I'm sweating along with these onions.
03:16Same.
03:17Now you can add the garbanzo beans.
03:19So this part of the recipe we were really surprised when we first learned it
03:23because we put tea bags in it and apparently that's a thing you do.
03:28It makes a big difference.
03:30Just regular black tea.
03:32Night night.
03:33Oh my god.
03:34Put the tea bags to bed.
03:37ASMR.
03:41Now you're going to do four teaspoons of jira dania powder.
03:46Half a teaspoon of chili powder.
03:48A teaspoon of salt.
03:50And then half a teaspoon of cream of tartar.
03:54A lot of people are really apprehensive about learning how to cook if they didn't necessarily
03:59grow up around it or if they just don't like to cook in general.
04:03We always suggest that find a recipe or a food dish that you like and learn how to make it.
04:08And eventually after you keep doing that with your dishes you're going to like stockpile
04:12all of your ingredients so it gets to the point where you're barely going grocery shopping
04:16because you have the majority of stuff.
04:18Guys this apartment is about to smell really good.
04:21I mean anytime there's like cumin it just smells so good.
04:27Very fragrant.
04:29Time to destroy these chickpeas.
04:33You mash like about a third of the chickpeas it kind of thickens it up a little bit.
04:37Yum.
04:39Add a teaspoon of grams of salt.
04:40Good.
04:42Okay so the dough has rested and it's now good to make into smaller balls and then roll out.
04:51And I'm right here ready to flip the chapatis.
04:55I feel like if any auntie is watching this they're going to be judging extra hard right now
05:00because these are not going to be perfect chapatis.
05:03I do not have the experience of an auntie.
05:05You're going to disappoint all the aunties.
05:06I'm going to disappoint all the aunties.
05:15This little ear right here would never happen with my mom.
05:19All right ready?
05:20Yep.
05:39Plate it up.
05:41One chapati for each of us.
05:42Put some fresh cilantro right on top of the chole with a little bit of lime or lemon.
05:49With Indian food you traditionally eat with your hands so that's what we're going to do.
05:57Killed it.
05:59Still not as good as when our mom makes it but like I feel like every time we make this
06:04we're getting a little bit closer.
06:06We're getting a little bit better.
06:07We love making this dish because it's one of our family favorites and it obviously tastes great but also it's
06:13just a classic South Asian dish.
06:15It brings us back to being home just because it is one of our favorites and we just grew up
06:20eating it so it feels very nostalgic and comforting to make this and eat it.
06:27Good job team.
