00:06well hello there folks and a very warm welcome as usual back to what's for tea it's lovely to
00:12see you again as usual and i hope that i find you very well and today i made a batch
00:18of these
00:18wonderful apple and cinnamon scones and as you can see i've made one large scones and cut them
00:25into wedges but you could use a cookie cutter and just do you know traditional round scones but
00:31i'll just show you how i'm making these so grab yourself a pan and to this you want to add
00:36about
00:36a tablespoon of butter and for spices i'm going to use cinnamon and then just a touch of ginger as
00:43well just for a lovely warm heat and these flavors work really well together so melt those down in
00:50your pan and then chop up an apple i am using a red apple use a green apple doesn't really
00:56matter
00:56just whatever you prefer and i'm going to keep the skin on mine because i think you know it's just
01:01a
01:01wee bit nicer it creates a nicer texture but you can peel your apple if you like so just make
01:06sure
01:07there are nice small pieces because we're going to be adding this to your scone dough so you want nice
01:12wee small pieces so cook your apples on medium for about five minutes just until they are starting to
01:19soften up and then you can just set these to the side and then grab yourself a large bowl and
01:24to
01:24this we're going to add the self-raising flour the sugar and just a pinch of salt run everything
01:30through a sieve this is going to give you lots of air and then just catch any wee lumps and
01:34bumps
01:35there might be in your flour or your sugar and then just want to mix these together with a spatula
01:41or a spoon whatever you've got just till they're nicely combined and all mixed through together and then
01:48we're going to add the wet ingredients so first of all your butter this is lovely cold unsalted butter
01:55cut into small cubes and that's going to make it quite easy to rub into the flour so just push
02:01the
02:02flour and the butter together with your fingertips until it's all really well combined and you don't
02:08have any large lumps of butter left in your bowl and then you can add your cooked apple and spices
02:14and then also your buttermilk as well so get these into your bowl and then again with a spoon or
02:21a
02:21spatula you just want to combine these really well until you've got no dry ingredients lurking in the
02:28bottom of your bowl and it'll come into a sort of rough sticky dough and then with your hand in
02:34the bowl
02:34you just want to bring this into a ball just until everything is nicely stuck together and you've got an
02:41actual ball that looks something like this if you find your dough is really sticky add another wee bit
02:47of flour to your hands pop this onto an oven tray you just want to flatten this down into a
02:53disc shape
02:53of about an inch thick you can do these any thickness you like but mine's is about an inch thick
02:59so
02:59something like this is ideal and i'm going to cover the top of my scone with some milk this is
03:05just
03:06regular whole milk all over the top and then round the sides i'm going to finish this off with some
03:11brown sugar so about a tablespoon of brown sugar and this is going to give you a lovely crunchy top
03:17and then with a sharp knife you just want to score your dough into eight segments or eight sections you
03:25know you don't have to go all the way through but you do want you know distinct segments so that
03:30when
03:31it comes out of the oven you know it's not going to all just join back up together again as
03:35it cooks
03:35so quite deep but not quite all the way through just like this so it's really easy just make sure
03:42your knife is nice and sharp so pop this into the middle of your oven for about 25 minutes your
03:48temperatures are on the screen a second ago depending on what you're using and it will come out looking
03:54something like this and doesn't it look amazing so you want to let this cool down for between 10 and
04:0015
04:00minutes and it will dry out you know obviously as it cools down as you can see the steam is
04:06still
04:07rising off of mine i didn't let mine cool down but i just wanted to show you for the purpose
04:12of the
04:13video now you can just go around all of your segments with a palette knife or another sharp knife
04:18just to make sure these are separating nicely but they should be all individual and they are absolutely
04:25delicious split them through the middle and pop a wee bit of butter on there and they're just
04:29lovely so thank you so much for watching if you're still here and a huge thank you as usual to
