The Sous Vide Supreme is the cool kid's kitchen appliance. It's shiny and mysterious and somehow takes a regular piece of fish and turns it into this-is-the-best-salmon-I-have-ever-had fish. A technique beloved by high-end chefs the world over, sous vide cooking is a process wherein food (meat, fish, vegetables, even eggs) is perfectly prepared inside a specialized, vacuum-sealed pouch that's placed in a targeted temperature water bath. That, of course, sounds really complicated and annoying, right?

Wrong-o! Turns out, it's about ten times quicker and easier than the traditional pan-on-stove method. We tested the Sous Vide Supreme and were pleasantly surprised to find that making a lovely piece of lemon herb salmon required, oh, twenty-five seconds of hands-on time, followed by ten additional seconds of clean-up. The best part is that no added oil is needed and none of the natural juices (and those omegas we're always talking about) are lost. Cooking at this low temperature ensures you the most tender, flavorful, nutritious food you can make at home — even if it sounds like a science project.

00:07Hi guys this is Kelsey with Finery29 and today we are back with another foodie test lab. Today
00:13we're working with the sous vide supreme which is a way to do sous vide cooking at home. Sous vide
00:18is a super popular cooking method with chefs because it is a dummy proof way to get a perfectly
00:22cooked piece of fish or chicken or meat or anything basically. Today we're going to make a lemon and
00:28mixed herb salmon and it's going to be done in about half an hour. So now I'm just going to
00:31season
00:32the fish with just a little bit of salt, a little oregano, a little thyme, a little rosemary and you
00:38don't really need to overdo it here because you're cooking the fish in its own juices. You're already
00:43going to get a ton of flavor. A little lemon for fun and then get the magic bag out. So
00:48now I'm going to
00:48vacuum seal the bag. This is the accoutrements that come with the sous vide supreme.
00:58And all the air is gone and it's a little perfectly, it's sort of like salmon art now. So here
01:05comes the magic
01:06part. A sous vide is really just a perfectly targeted temperature water bath. So for example if you want
01:13a medium rare steak you just set it to 134 degrees and it's guaranteed to come out like that every
01:18single time. And of course you're not losing any of the flavor and the juices and all that stuff that
01:22drifts into the pan when you're cooking in a traditional way. For salmon we just set it to 60
01:27degrees Celsius. It's just going to happen in about half an hour. But the good thing is you really
01:32can't overcook in this machine. So if I get held up, if something happens and I have to leave it
01:36in here
01:36for another 20 minutes, it's not going to overcook. The texture is still going to be great. So now we
01:41wait.
01:55Ta-da! I have a perfect piece of salmon but my kitchen smells like nothing. And now all I have
02:00to
02:01do is cut it out of the bag. So remember you never want to use like an actual Ziploc bag
02:05because the
02:05PVC's and garbage will leach into your food. You only want to use these like magic science bags that come
02:10with the machine. So here we go. Here's the whole meal. Here's my beautiful piece of sous vide salmon.
02:15It is falling apart tender. It literally took about 30 minutes from fridge to plate. I have virtually no
02:21clean up and now it's just time to eat. Oh my god. Excuse me. Excuse me. I need to be
02:30alone with my fish.
