00:06hello there everyone how are you it's lovely to see you again and i hope that i find you
00:12very well and i thought because halloween is just around the corner i would pop this video up for
00:18these lovely candy apples this is this week's archive recipe so this one is from a couple of
00:24years ago so let me hand you over to me from a couple of years ago and i'll catch up
00:29with you
00:29just at the end this is everything that i used here but as usual all of the ingredients along
00:34with their quantities will be in the description box underneath the video just a couple of things
00:40obviously you have to do properly to make sure these turn out perfectly first thing is your apples
00:46it is recommended that you use granny smiths and then your food coloring is recommended that you use
00:52a gel type coloring so that's the one that i'm using here so a nice tart green apple
00:58make sure you've got all your stickers off of there now if you choose organic apples which is
01:04recommended they won't have that waxy film on you know but even if you are using organic apples i
01:10wouldn't skip this step because this is going to be quite important to your end result and this is
01:15going to make sure that you don't have lots of air bubbles or sort of pitted candy on the outside
01:20of
01:20your apple so do this a couple of days before you plan on making these you know it does sound
01:26ridiculous but it'll make a world of difference so pop them into your boiling water give them a good
01:32dry and just let them sit for a couple of days so yeah do do that in advance you can
01:38do them all in
01:38the same day but you might not have such a good result so you're going to want some lollipop sticks
01:43to put into your apples and i'm going to dip the end of my sticks into some lime juice or
01:48lemon juice
01:49and this just stops your apple breaking down you know because obviously you're piercing the skin
01:54so it's got a tendency to go brown on the top so if you pop it into some lemon or
01:59lime juice that'll
02:00prevent that happening so that's a good wee tip but like i said do make sure your apples are bone
02:06dry
02:06before you attempt to dip them into the candy and you do want that waxy film off of the outside
02:13because you don't want your candy just slipping off your apple i'm going to be using a candy
02:18thermometer but you don't need to use one of these and i will show you when we get there what
02:23you can
02:23do if you don't have one so grab yourself a large pan you want to put this onto a medium
02:28heat pop in
02:29your water and i'm using golden syrup but if you can't get this or don't have this light corn syrup
02:35will do and then your sugar which is a ton of sugar and then your coloring i'm going to pop
02:43in one
02:44teaspoon of the gel coloring and i'm just going to give that wee pat down just to make sure my
02:49sugar
02:49is fully submerged and just give your coloring a wee stir and it doesn't have to be you know
02:55completely even throughout because as this bubbles it will all combine anyway so you want to let this
03:01bubble away in a medium heat you can stir it you know if you want don't be afraid to stir
03:05it
03:06it shouldn't crystallize so just give it a wee push round if you feel as though you have to
03:11i've got to stir these things i can't help myself but like i said if you don't have a candy
03:17thermometer
03:17there's a really quick and easy way to check that your candy is at that you know hard crack stage
03:23get
03:24yourself a glass of cold water put a wee teaspoon in and if it you know sets immediately and becomes
03:30crunchy then you're ready to go and all you have to do now is get your candy off of
03:35the heat so turn off your heat and then gently swivel your apples around and you will have
03:40something that looks like this and all you need to do now is let them set which will take
03:45a couple of hours best done overnight but yeah a couple of hours should do it and they were wonderful
03:51now i made these for someone else so i can't show you what it looks like inside but they were
03:56absolutely
03:57perfect so do let me know whether you're planning to give those a go but i would start them today
04:02if
04:02you're planning on eating them you know on halloween itself because you do need a wee bit of time to
04:07prepare but thank you so much for watching and a special thank you as usual to the supporters of
04:12the channel over my patreon page to the channel members here on youtube to anyone who's left me a
