Silky, buttery rum and raisin fudge with a rich vanilla flavour—and it’s made without alcohol. Cheryl shares an easy Scottish-style recipe, using rum flavouring for that classic taste, with the option to use real rum instead.

Follow the simple stovetop method as butter, condensed milk, sugar, raisins and vanilla are cooked, beaten until thick, then left to set into generous squares. The finished fudge is glossy, packed with raisins and lovely for sharing or giving as a homemade treat.

00:06hello there folks and a very warm welcome back to what's for tea and it's lovely to see you
00:12and i hope that i find you well and today i made a batch of this beautiful rum and raisin
00:18fudge
00:18it's just oh it's just one of those things one piece is never enough so i'm just going to show
00:24you how i'm putting this together and as usual all ingredients will be on the screen as we
00:29go so go over to your cooker the first thing i'm going to add to the pan is my butter
00:34i am using
00:35unsalted butter you can use salted if you like i'm also going to add some condensed milk so straight
00:41in with that and the sugar i am using is brown demerara sugar you can use soft brown sugar if
00:48you prefer a smoother texture this one is quite gritty so it really does you know it can affect
00:54the texture quite a bit depending on the sugar that you use like i said i want a more gritty
01:00fudge
01:00this time so i am using the demerara but use the soft like i said if you want a smoother
01:06fudge
01:06and then you can either add milk or cream i am using cream and that's just going to make it
01:12extra
01:12rich and delicious but use milk if you prefer i'm also going to add a teaspoon of vanilla just for
01:19some extra sweetness and flavor and then your raisins and my rum flavoring i am going to add
01:24at the end this is an alcohol free recipe you can use actual rum if you prefer but i'm going
01:31to use
01:31the rum flavoring so you want to slowly melt all of these ingredients together in quite a low heat
01:38just until your butter has melted and all of your sugar has dissolved i'm going to use a thermometer
01:44if you don't have one of these it's no problem you just want to increase your heat slightly and
01:50then get this onto a rolling boil for 15 minutes so you really don't need a thermometer i am just
01:56using one because i've got one and if you've got one get this up to 240 degrees for 15 minutes
02:03and
02:04you want to stir this occasionally just to keep it moving and make sure it doesn't stick after 15 minutes
02:10it should be looking something like this so just set this to the side to cool down for a few
02:15minutes
02:16so just leave it for a few minutes and then go back and give it a good stir and you
02:20want to beat this
02:21quite vigorously for about five minutes and then i'm this is when i'm going to add my raisins so i'm
02:28just going to pop my raisins straight in there and give it a good stir through and then i'm going
02:32to
02:32add the rum flavoring like i said this is alcohol free if you want to use actual rum use two
02:38tablespoons
02:39if you're using this concentrated flavoring just use two teaspoons because it's quite strong and
02:46then you want to beat this again for another few minutes and it'll go lovely and thick just like
02:52this this is ideal lovely and glossy and thick and smooth now you want to grab your tin i am
02:58just using
02:59a square tin which i've lined you want to tip your mixture in there and you just want to kind
03:04of
03:04flatten it down make sure it's nice and even you can tilt your pan from side to side because it'll
03:10still be quite loose at this point but getting thicker by the second this stuff sets quite quickly
03:16so you will want to do this but as quickly as you can just keep turning your pan around and
03:22smoothing
03:22it down with the back of a spoon tilt your pan around and as you can see there is a
03:26wee bit of
03:26movement there but you do want this nice and flat so that when you cut this into squares
03:31it's fairly even and everybody's getting the same size of chunk so leave this to set you don't need
03:37to refrigerate this unless you're in a very warm country otherwise you might want to refrigerate
03:42this but this will take a few hours to set properly and there should be no heat in here at
03:48all and it
03:49should be looking something like this it lifts really easily out your pan and as you can see it's
03:54set beautifully it's lovely and solid so all you have to do now is cut this into batons and then
04:00into wee squares just use a nice sharp knife to make sure you get straight through all those
04:06raisins and this is absolutely beautiful it's got such a strong sort of buttery vanilla rum flavour
04:14and the addition of those raisins just gives it such a lovely texture so just take your time
04:20cut this into nice wee squares and I'm going to pile this up on a plate just for the sake
04:25of the
04:26youtube picture and this will keep quite happily in an airtight container for a good few days before
04:32it starts to go a bit you know a bit not so nice because we've used fresh cream in here
04:37you know
04:38it's not going to keep forever but this usually doesn't hang around very long so do let me know
04:43if you're planning on giving that one a go it's lovely and makes a good wee gift as well thank
04:49you so
