00:00Little round coconut cookies, too delicious to be nutritious, and yet packed with all the healthy benefits of whole food
00:06ingredients.
00:07Born in a home kitchen in Ithaca, New York, these organic, gluten-free treats have spread near and far, from
00:13local farmer's markets to retailers nationwide.
00:19I founded Emmys in a home kitchen with my partner Ian back in 2009.
00:25With his severe food sensitivities, there really weren't a lot of options that were made with just clean ingredients.
00:31So we wanted to create something that was not only delicious, but just more simple as far as the ingredient
00:37panel.
00:38My name is Samantha Abrams. I am the co-founder of Emmys Organics.
00:42We're here in Ithaca, New York, at our manufacturing facility, where I'm going to walk you through how to make
00:47our dark cacao coconut cookies.
00:53Each coconut cookie is made from organic, gluten-free, and non-GMO ingredients.
00:58Coconut, coconut oil, cacao powder, agave syrup, and almond flour combined to make the base of the cookie.
01:09Ingredients matter most. We want to have a short ingredient list and we want to source the highest quality, best
01:14tasting ingredients as possible.
01:17That's just how we are as people. We are always reading ingredients in the back of other products that we're
01:23buying and we cook really simply.
01:25So when it came to a product that we were making, that was very important to us.
01:34Back in the day, we used to actually scoop all of our batter by hand.
01:39After we started growing, we found a machine that made a similar shape and size so that we didn't have
01:44to do it by hand anymore.
01:44The dough is cut into uniform balls and distributed evenly on a rack before the drying process begins.
01:56Once the cookies are formed, they go through a drying process for two hours.
02:01What distinguishes an Emmys cookie from the other no-bake treats is how moist and soft the cookies are after
02:07this process.
02:09The end result is a cookie that is dried, but it's actually perfectly moist inside.
02:15One thing that people say they like most about our products is the consistency and the texture.
02:25So for our grab-and-go size, we put three cookies through this machine and then they turn out like
02:30this.
02:36Our packaging is really clear. We like to have a window because we want people to know what the product
02:40actually looks like.
02:44We also have our important markers like USDA Organic, gluten-free and vegan.
03:03After they are packaged, the cookies are shipped to consumers and retailers nationwide.
03:08While you know Emmys Organics as a healthy snack, you might not know the care that goes into making each
03:13cookie responsibly and sustainably.
03:15So because we manufacture our products in-house, there's a lot that we're doing to reduce our carbon footprint.
03:21Some of those things are sourcing our energy through wind and solar sources, composting our food waste and recycling.
03:30Emmys has come a long way from the days of being made in a home kitchen, but the care, love
03:34and quality that goes into each cookie remains the same.
03:37Being environmentally conscious is not even a choice for us.
03:41It's very much who we are as people and as a company.
03:45So even the way that we function as a manufacturer or as an employer, it really just comes from who
03:52we are as people.
03:54It's not really much of an extra shift for us. It's just how we feel it's supposed to be done.
03:58We have an end.
04:01It's just how we are as people.
04:02We're выдwired by ourselves.
04:03We have an end.
04:03We're here to go.
04:03We're here to go.
04:03We've got you in the middle of the womb.
04:03We're here to go.
04:04And we've got you in the middle of the womb.
04:04It's been a hard way.
04:04We're here to make it out and get out of here.
04:04We've got you in the middle of the womb!
04:05We're here to go.
